Tajima cattle are one of the four Wagyu breeds that have underpinned Japan’s reputation for producing spectacular beef with the extraordinary marbling that produces those famed rich, juicy flavours. We serve it grilled as it should be, and served with grilled vegetables and a selection of sauces. Bring a good friend, you might need some help.
